Shawarma “Philly Cheesesteak”

Directions

  • 1Butter the inside of the pretzel roll; making sure it is entirely covered to ensure even toasting.
  • 2Toast the bread on griddle pan or cast iron using peanut or soy oil and set aside.
  • 3Thinly shave beef (or lamb if desired)
  • 4Shawarma spice: In a bowl, mix together coriander, cardamom, turmeric, cayenne pepper, cumin, paprika, cinnamon and black pepper.
  • 5Slice onions and place in a bowl to rinse with water. Rinse and drain onions. Sprinkle with a very hearty amount of sumac and let sit until they start to wilt.
  • 6In a skillet, heat peanut oil until just before the pan begins to smoke. Add meat and sear until it starts to caramelize sprinkle shawarma spice on top and mix until meat is coated in spices. Remove from heat when meat is cooked.
  • 7Slice cheese and set on plate, ready for assembly.
  • 8Assembly: Place the desired amount of meat in the bun, topping with a good amount of the wilted onions. Top with cheese, and place back in oven for 4-5 minutes until cheese is melted. Ready to eat!
